Harvests are manual to preserve the quality of the grapes.
As an old grape variety, the white Carignan is vinified and 9-month ageging in acacia barrels, which gives a grand white wine with a good ageing potential.
Red wines cuvées « La Bête Noire » and « Podio Alto » are aged for 12 months in oak barrels. Wine is ageing for one year in bottle before selling.
